Pre-heat the oven to 220°C/Fan 200°C/Gas Mark 7 and line a cookie sheet with baking paper.
Melt the butter, sugar and golden syrup over a gentle heat.
In a separate bowl, combine the flour, bicarbonate of soda and ginger.
Pour the butter mixture into the dry ingredients and stir to form a dough.
Roll out the gingerbread dough to the thickness of a pound coin.
Use a rainbow cutter or free hand the shape with a knife like I did.
Bake for 10 minutes or until slightly brown on top!
Leave to cool completely. Once cool make your icing up, combining a little water and icing sugar.
Separate into 3 bowls. Add a little food colouring to each in your three different colours. Carefully pipe a rainbow shape.
Leave to set. And enjoy!
