Boho Gingerbread Cookies

Servings: 30 biscuits


  • 250 g butter
  • 200 g brown sugar
  • 7 tbsp golden syrup
  • 600 g plain flour
  • 2 tsp. bicarbonate of soda
  • 4 tbsp ground ginger
  • 200 g icing sugar
  • food colouring


  • Pre-heat the oven to 220°C/Fan 200°C/Gas Mark 7 and line a cookie sheet with baking paper.
  • Melt the butter, sugar and golden syrup over a gentle heat.
  • In a separate bowl, combine the flour, bicarbonate of soda and ginger.
  • Pour the butter mixture into the dry ingredients and stir to form a dough.
  • Roll out the gingerbread dough to the thickness of a pound coin.
  • Use a rainbow cutter or free hand the shape with a knife like I did.
  • Bake for 10 minutes or until slightly brown on top!
  • Leave to cool completely. Once cool make your icing up, combining a little water and icing sugar.
  • Separate into 3 bowls. Add a little food colouring to each in your three different colours. Carefully pipe a rainbow shape.
  • Leave to set. And enjoy!
