Autumn has crept in and with that so have all of my soup recipes. I have already made my broccoli and cheddar soup recipe and recently I tried my hand at a simple pea and ham soup recipe. Soup is great for lunch as it fills me up nicely and it’s healthy. Edith is more than happy to eat a bowl full of soup, which means I can hide lots of veggies in there and know that she is filling up on something good. She definitely has my love of soup, something I get from my Mum.

It’s also a budget friendly lunch option as most of the time the recipes use leftovers, which means you don’t have to spend a fortune on ingredients. In fact all of the ingredients for this soup are store cupboard and freezer essentials.

Of course you can make this as indulgent as you like. I opted for streaky bacon, however if you want to make the soup recipe healthier you could use lean ham instead. It’s completely up to you.

This recipe is really simple and doesn’t take long at all. The whole recipe only takes 30 minutes and it’s one you can leave bubbling on the stove while you get on with something else. No continuous stirring or tending to.

The soup is such a glorious colour you can almost tell it’s good for you.

Easy Pea & Ham Soup

– Serves 4 –

knob of butter

1 onion, chopped

1 l of stock, I used vegetable

1 medium potato, chopped

500g frozen peas

100g cooked bacon (you can use whatever you have)

In a medium pan heat the butter and gently fry the onions until softened.

Place the potato in and stir until coated in butter.

Pour over the stock and simmer until the potato is soft.

Once the vegetable are soft, pour in the frozen peas and bring to the boil.

Cook for a few minutes.

Remove from the heat and blend. I chose not to blend the soup too smoothly as I like it to be a little chunky.

Stir in the ham and serve.
