Sometimes when a recipe is so simple I feel a fraud calling it a recipe. But oh my, this simple tomato and garlic spaghetti is delicious. In fairness it’s a great “cheat” meal because Amy’s Kitchen have done all the hard work for you.
There are some amazing soups in the Amy’s Kitchen range, organic lentil, organic mushroom, organic lentil vegetable to name just a few. Soups are great as a base to other recipes, they don’t have to be used on their own. They can make great pie fillings or in this case a great pasta sauce.
This month I wanted to keep my recipe simple. Maybe it’s because I’m starting to realise that I won’t have much time to cook when I have a newborn and a toddler to look after. But I don’t want to sacrifice good food. Using the tin of soup as a quick pasta sauce and adding 2 crushed garlic cloves whilst you heat it up. It’s really doesn’t get easier than that. Comfort food but healthy too.
Of course you could add whatever you like to it. You could add cheese or other veggies but sometimes keeping it really simple is the way to go.
I’d love to hear about your simple recipes and did you stock up your freezer before having a baby? We didn’t last time and we did end up with a lot of takeaway. This time I want to be a little more prepared.
Simple tomato and garlic spaghetti.
1 tin of Amy’s Kitchen Chunky Tomato Soup
2 garlic cloves, crushed
150g dried spaghetti
Cook the pasta according to pack instructions.
In a medium pan warm through the soup and add in the crushed garlic.
Once the pasta is fully cooked, drain and add to the soup.
Mix well and serve immediately.
